When an item has sold, you don’t need to delete it.

Go to Products
From the dashboard, select:
Products → All Products
Open the product
Find the product you’d like to update and click Edit.
Change the stock status
In the Product data panel, update the stock status to:
Out of stock
(or whichever option you’ve chosen for sold items).
Update the product
Click Update.
The product will no longer appear as available to purchase.
